Prepare the Brisket
In a large skillet, heat olive oil over medium-high heat. Season the brisket with taco seasoning and sear on all sides until browned.

Braised Brisket
Transfer the seared brisket to a slow cooker. Pour beef broth over it, cover, and cook on low for 8 hours or until the brisket is tender.

Cook the Corn
If using fresh corn, cut the kernels off the cob. If using frozen, cook as per package instructions. Mix the corn with some taco seasoning for added flavor.

Shred the Brisket
Once cooked, remove the brisket from the slow cooker and shred the meat with two forks. Return the shredded meat to the slow cooker to soak up more juices.

Warm the tortillas in a skillet or microwave. Fill each tortilla with shredded brisket, corn, cheese, and top with sour cream and chopped cilantro. Serve with lime wedges on the side.
