Short Ribs with Demi Glace, Roasted Forest Mushrooms & Crispy Onions

Cooking Instructions

    Prepare the Ribs

    Preheat your oven to 350°F (175°C). Season the short ribs with salt and black pepper. In a large oven-safe pot, heat olive oil over medium-high heat and sear the ribs on all sides until browned. Remove the ribs and set aside.

    Sauté Vegetables

    In the same pot, add onion, carrot, celery, and garlic. Sauté until softened, about 5 minutes.

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to release any caramelized bits. Let it simmer for about 10 minutes.

    Add Stock and Ribs

    Add the beef stock and demi-glace. Return the short ribs to the pot. Bring to a boil, then cover and transfer to the oven. Cook for 2.5 to 3 hours until the meat is tender.

    Prepare the Mushrooms

    While the ribs are cooking, melt butter in a skillet over medium heat. Add the sliced mushrooms and shallots, sautéing until golden brown. Season with salt and pepper to taste.

    Crispy Onions

    In a separate pot, heat vegetable oil for frying. Dredge thinly sliced onions in flour and fry until golden brown and crispy. Drain on paper towels.

    Serve

    Once the ribs are done, remove them from the oven. Serve the ribs atop a bed of sautéed mushrooms, drizzled with the cooking liquid, and topped with crispy onions and fresh parsley.
