    In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent. Add minced garlic and ground beef, cooking until the beef is browned. Season with salt, black pepper, and nutmeg. Stir well and cook for another 5 minutes. Remove from heat and let cool.

    In a separate saucepan, melt 50 grams of butter over medium heat. Add the all-purpose flour and whisk continuously for about 2 minutes. Slowly pour in the milk while whisking to avoid lumps. Cook until the mixture thickens, about 5 minutes. Remove from heat and mix in the beef filling.

    Shape the Croquetas

    Once the mixture is cool, form it into small logs or balls. Place them on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
