Cooking Instructions

  1. 1

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta water.

  2. 2

    Sauté the Mushrooms

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the forest mushrooms and cook until they are tender and browned, about 5-7 minutes. Season with salt and pepper.

  3. 3

    Make the Goat Cheese Crema

In a small bowl, combine the herbed goat cheese and heavy cream. Mix until smooth and creamy. If it's too thick, add a little reserved pasta water to achieve desired consistency.

  4. 4

    Combine Ingredients

Add the cooked pasta to the skillet with the mushrooms. Pour the goat cheese crema over the pasta and toss everything together until the pasta is well coated. Cook for another 2-3 minutes, adding more pasta water if needed.

  5. 5

Finish with Cheese and Truffle Oil

Remove from heat and stir in the shredded Manchego cheese and drizzle with truffle oil. Adjust seasoning with salt and pepper as needed.

  6. 6

    Garnish and Serve

Serve the pasta warm, garnished with chopped fresh parsley and additional Manchego cheese on top if desired.
