Make the Apple Compote
In a saucepan, combine diced apples, brown sugar, and cinnamon. Cook over medium heat until apples are tender and the mixture is syrupy, about 15 minutes. Set aside to cool.

Cook the Crepes
Heat a non-stick skillet over medium heat. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom. Cook until the edges lift and the bottom is lightly browned, about 2 minutes. Flip and cook for another minute. Repeat with remaining batter.

Prepare the Vanilla Custard
In a mixing bowl, whisk together heavy cream and powdered sugar until soft peaks form. Set aside.

Assemble the Frixuelos
Fill each crepe with apple compote, fold, and place on a serving plate. Top with vanilla custard, whipped cream, and sprinkle with candied walnuts.
