    Prepare the Beef

    Season the beef chuck roast with salt, pepper, and paprika. Dredge in flour, shaking off any excess.

    Sear the Beef

    In a large Dutch oven, heat olive oil over medium-high heat. Add the beef and sear on all sides until browned. Remove and set aside.

    Sauté Vegetables

    In the same pot, add chopped onions and minced garlic. Sauté until softened, about 5 minutes.

    Add Broth and Vegetables

    Pour in beef broth and bring to a simmer. Add carrots, potatoes, bay leaves, and the beef back into the pot.

    Braise the Beef

    Cover and reduce heat to low. Let it braise for 2.5 to 3 hours or until the beef is tender.

    Prepare Crispy Shallots

    In a small skillet, heat oil over medium-high heat. Fry the shallots until golden and crispy. Drain on paper towels.

    Serve

    Serve the braised beef and vegetables in bowls, topped with a dollop of sour cream and crispy shallots.
