Make the Filling
In a bowl, combine the ricotta, mozzarella, parmesan, and diced prosciutto. Mix well and season with salt and pepper.

Fill the Tortellini
Take a piece of tortellini pasta, place a small amount of filling in the center, and fold the pasta over to create a triangle. Bring the corners together and pinch to seal. Repeat with remaining pasta and filling.

Cook the Tortellini
In a large pot of boiling salted water, cook the tortellini for about 4-5 minutes or until they float to the surface. Drain and set aside.

Prepare the Sauce
In a large skillet, heat olive oil over medium heat. Add the heavy cream and smoked paprika, stirring to combine. Let simmer for 3-4 minutes until slightly thickened.

Combine
Add the cooked tortellini to the skillet with the sauce. Toss gently to coat the pasta evenly. Adjust seasoning with salt and pepper as needed.

Plate the tortellini, garnishing with fresh basil. Serve immediately.
