    Prepare the Chicken

    Flatten the chicken breasts to an even thickness using a meat mallet. Season both sides with salt, black pepper, and Italian seasoning.

    Sauté the Chicken

    In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes on each side, or until cooked through. Remove chicken from the skillet and set aside.

    Cook the Mushrooms

    In the same skillet, add the remaining tablespoon of butter. Add minced garlic and sliced mushrooms, sautéing until the mushrooms are golden brown, about 5-7 minutes.

    Make the Sauce

    Pour in the sherry wine to deglaze the skillet, scraping up any browned bits. Allow it to simmer for 2-3 minutes until slightly reduced. Stir in the heavy cream, and bring to a gentle simmer.

    Combine and Serve

    Return the chicken to the skillet, coating it with the sauce. Cook for an additional 2 minutes to heat through. Sprinkle with chopped parsley before serving.
