Make the Dough

In a mixing bowl, combine the flour, sugar, cocoa powder, and salt. Mix well. In another bowl, whisk together the egg yolks, white wine, and melted butter. Gradually add the wet ingredients to the dry ingredients and mix until a dough forms.

Knead and Rest

Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth. Wrap the dough in plastic wrap and let it rest for 1 hour.

Roll and Cut

After resting, roll out the dough as thin as possible, about 1/8 inch thick. Use a round cutter (about 4-5 inches in diameter) to cut out circles.

Form Shells

Wrap each dough circle around a cannoli tube, sealing the edges with a bit of water. Repeat until all dough is used.

Fry the Shells

Heat oil in a deep frying pan to 375°F (190°C). Fry the cannoli shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.
