Prepare the Bolognese Sauce

In a large skillet, heat olive oil over medium heat. Add ground beef (or sausage) and cook until browned. Drain excess fat. Add chopped onions, garlic, and cook until translucent. Stir in diced tomatoes, tomato paste, and Italian herbs. Let simmer for 20-30 minutes.

Prepare the Filling

In a mixing bowl, combine ricotta cheese, half of the Parmigiano-Reggiano, half of the mozzarella, chopped basil, chopped parsley, egg, salt, and black pepper. Mix until smooth.

Fill the Manicotti

Using a piping bag or a spoon, fill each manicotti shell with the cheese mixture. Be generous but avoid overfilling.

Assemble the Dish

Preheat the oven to 375°F (190°C). Spread a thin layer of Bolognese sauce on the bottom of a baking dish. Arrange the filled manicotti on top of the sauce. Pour remaining Bolognese sauce over the manicotti and sprinkle the rest of the mozzarella and Parmigiano-Reggiano on top.

Bake

Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

Serve

Let the manicotti cool for a few minutes before serving. Garnish with additional chopped herbs if desired.
