1. Prepare the Ingredients
Dice all the vegetables and set them aside. If using eggs, beat them in a separate bowl.
2. Heat the Oil
In a large skillet or wok, heat the sesame oil over medium-high heat.
3. Cook the Eggs (Optional)
If using, pour the beaten eggs into the skillet and scramble until fully cooked. Remove and set aside.
4. Stir-Fry the Vegetables
Add the minced garlic and grated ginger to the skillet. Stir-fry for about 30 seconds, then add the diced carrots, peas, bell pepper, and green onions. Cook for 3-4 minutes until the vegetables are tender.
5. Add the Rice
Add the cooked rice to the skillet, breaking apart any clumps. Stir to combine with the vegetables.
6. Season the Rice
Pour in the soy sauce and mix well. Season with salt and black pepper to taste.
7. Combine Everything
If you cooked eggs, add them back into the skillet and mix everything together. Stir-fry for another minute to heat through.
8. Serve
Remove from heat and serve hot. Enjoy your vegetable fried rice!
