Prepare the Vegetables
Wash and slice the vegetables into bite-sized pieces. Set aside.

Make the Tempura Batter
In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, and salt. Gradually add ice water and mix until just combined. The batter should be slightly lumpy.

Heat the Oil
In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

Batter the Vegetables
Dip each piece of vegetable into the tempura batter, making sure it is evenly coated.

Fry the Vegetables
Carefully place the battered vegetables into the hot oil in small batches. Fry until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.

Serve
Serve the tempura vegetables hot with a dipping sauce of your choice.
