1. Marinate the Chicken
In a bowl, combine soy sauce, mirin, minced garlic, grated ginger, salt, and black pepper. Add the chicken breasts and marinate for at least 30 minutes.
2. Prepare the Grill
Preheat your hibachi grill or a stovetop grill pan over medium-high heat. Add vegetable oil to the grill.
3. Grill the Chicken
Remove the chicken from the marinade (reserve the marinade) and place it on the grill. Cook for about 6-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks.
4. Grill the Vegetables
In the last few minutes of cooking the chicken, add the sliced zucchini, bell peppers, and onions to the grill. Drizzle with a little oil and grill until tender, about 4-5 minutes.
5. Serve
Slice the grilled chicken and serve it alongside the grilled vegetables. Drizzle with the reserved marinade if desired.
