Mousse Preparation

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a double boiler or microwave until smooth. Allow it to cool slightly.

    Whisk the Egg Yolks

    In a separate bowl, whisk the egg yolks and granulated sugar until the mixture is pale and creamy.

    Combine Chocolate and Yolks

    Slowly add the melted chocolate to the egg yolk mixture, stirring continuously until fully combined. Add the vanilla extract and a pinch of salt.

    Beat the Egg Whites

    In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Whip the Cream

    In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until no streaks remain.

    Chill the Mousse

    Spoon the mousse into serving dishes or cups and refrigerate for at least 2 hours or until set.

    Serve

    Garnish with chocolate shavings or whipped cream, if desired, and serve chilled.
