Method
Prepare the Pancake Batter

Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the mixed fruit.
Make the Golden Raisin Compote

Cook Raisins
In a small saucepan, combine the golden raisins, water, lemon juice, cinnamon, and sugar. Bring to a simmer over medium heat and cook until the raisins are plump and the mixture is slightly thickened, about 10 minutes.
Prepare Maple Butter

Mix Maple Butter
In a small bowl, combine the softened unsalted butter and maple syrup. Mix until well combined and creamy.
Cook the Pancakes

Heat Skillet
Heat a non-stick skillet or griddle over medium heat and grease lightly with butter.

Cook Pancakes
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
Serve

Serve the pancakes warm with the golden raisin compote drizzled on top and a dollop of maple butter.
