Method

Preheat your oven to 225°F (110°C). In a clean mixing bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar, continuing to beat until stiff peaks form.

Gently fold in the powdered sugar, coconut flakes, and vanilla extract until just combined.

Spoon the meringue mixture into a piping bag and pipe small circles onto a baking sheet lined with parchment paper.

Bake in the preheated oven for 1.5 to 2 hours until the shells are dry and crisp. Turn off the oven and let the cookies cool completely inside.

Making the Chocolate Filling

Melt the Chocolate

In a microwave-safe bowl, combine the mint semi-sweet chocolate chips and butter. Heat in the microwave in 30-second intervals, stirring until melted and smooth.

Add Cream and Mint Extract

Stir in the heavy cream and mint extract until fully incorporated. Let the mixture cool slightly until it thickens.

Assemble the Cookies

Spread a dollop of chocolate filling on the flat side of one cookie shell and press another shell on top to form a sandwich. Repeat with remaining cookies.
