Prepare the Chicken
Preheat your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels and season them with salt and black pepper on both sides.

Sauté Shallots and Garlic
In a large oven-safe skillet, heat the olive oil over medium heat. Add the sliced shallots and minced garlic, sautéing for about 3-4 minutes until they are softened and fragrant.

Brown the Chicken
Add the seasoned chicken thighs to the skillet skin-side down. Cook for 5-7 minutes until the skin is golden brown. Flip the chicken over.

Add Broth and Thyme
Pour the chicken broth into the skillet and add the fresh thyme. Bring to a simmer.

Bake the Chicken
Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Finish with Fermented Shallots
Remove the skillet from the oven. Stir in the fermented shallots and let it rest for 5 minutes before serving.
