Steak Preparation

    Seasoning the Steak

    Generously season the flat iron steak with salt and black pepper on both sides.

    Searing the Steak

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the steaks and sear for 4-5 minutes on each side for medium-rare, or until desired doneness. During the last minute of cooking, add garlic purée to the skillet to infuse flavor.

    Resting the Steak

    Remove the steaks from the skillet and let them rest for 5 minutes before slicing.

Cottage Fries Preparation

    Preparing the Potatoes

    Wash and cut the russet potatoes into wedges or fries. Toss them in a bowl with olive oil, salt, and paprika until evenly coated.

    Baking the Fries

    Preheat the oven to 425°F (220°C). Spread the potatoes in a single layer on a baking sheet and bake for 30-35 minutes, flipping halfway through, until golden and crispy.

Mushroom Bordelaise Preparation

    Sautéing the Mushrooms and Shallots

    In a saucepan, melt butter over medium heat. Add sliced mushrooms and shallots, and sauté until soft and browned, about 5-7 minutes.

    Making the Bordelaise Sauce

    Add red wine to the pan and bring to a boil. Reduce heat and simmer until reduced by half. Then add beef broth and thyme, simmering until sauce thickens slightly, about 10 minutes.
