In a saucepan, combine the chopped leeks and lettuce with 1 cup of water. Simmer for 15 minutes, then strain the mixture to extract the syrup. Set aside to cool.
2. Mix the Cocktail
In a cocktail shaker, combine the cooled leek and lettuce syrup, Eau Claire Three Point Vodka, fresh lemon juice, cloudy apple juice, and simple syrup. Fill the shaker with ice and shake well until chilled.
3. Serve
Strain the mixture into a glass filled with ice. Garnish with fresh mint leaves and serve immediately.
