Prepare the Soup

Add Broth and Simmer
Pour in vegetable broth, add salt and black pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes until apples are tender.

Blend the Soup
Using an immersion blender, blend the soup until smooth. Stir in heavy cream and adjust seasoning if necessary. Keep warm.
Prepare the Candied Pork Belly

Cook the Pork Belly
In a skillet, combine pork belly, brown sugar, soy sauce, and black pepper. Cook over medium heat until the sugar melts and the pork is caramelized, about 15-20 minutes. Set aside.
Prepare the Sweet and Sour Onions

Cook the Onions
In a separate pan, combine sliced onions, apple cider vinegar, and brown sugar. Cook over medium heat until the onions are softened and the mixture thickens, about 10 minutes.

Serve the Dish
Ladle the velouté into bowls, top with candied pork belly, sweet and sour onions, and a generous sprinkle of grated aged cheddar.
