Marinate the Chicken
In a large bowl, combine olive oil, lemon juice, minced garlic, ground cumin, paprika, salt, and black pepper to create the marinade. Add the chicken thighs and coat well. Cover and refrigerate for at least 1 hour, preferably overnight.
Prepare Skewers
If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat your grill to medium-high heat.
Skewer the Chicken
Remove the marinated chicken from the refrigerator. Thread the chicken pieces onto the skewers, leaving a little space between each piece.
Serve
Remove the skewers from the grill and let them rest for a few minutes. Serve the shish kebab chicken with rice and a fresh house salad.
