Marinate the Lamb
In a large bowl, combine the olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, and lemon juice. Mix well to create a marinade. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat the grill to medium-high heat.
Skewer the Lamb
Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece for even cooking.
Grill the Kebab
Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
Serve
Remove the kebabs from the grill and let them rest for a few minutes. Serve hot with rice and a house salad, garnished with fresh parsley.
