Tzatziki

Tzatziki

Prepare the Cucumber

Grate the cucumber and squeeze out excess water.

Mix Ingredients

In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and dill. Mix well.

Chill

Cover and refrigerate for at least 30 minutes before serving.

Dolma

Cook Rice

In a pan, heat olive oil, add onion and sauté until translucent. Add rice and stir for 2 minutes. Add chopped tomato, pine nuts, lemon juice, salt, and pepper. Cook for 10 minutes, then stir in parsley.

Stuff Grape Leaves

Lay grape leaves flat, place a spoonful of rice mixture at the base, fold sides over and roll tightly.

Cook Dolma

Place dolmas in a pot, cover with water, and simmer for 40 minutes until cooked.

Hummus

Blend Ingredients

In a food processor, combine chickpeas, tahini, minced garlic, lemon juice, olive oil, salt, and cumin. Blend until smooth.

Adjust Consistency

Add water if needed to reach desired consistency.

Serve

Transfer to a bowl, drizzle with olive oil, and serve with pita bread or veggies.
