Prepare the Syrup
In a saucepan, combine sugar, water, honey, and ground cinnamon. Bring to a boil, then reduce heat and let simmer for about 10 minutes. Remove from heat and stir in the vanilla extract. Let cool.
Add the Nut Filling
In a bowl, combine the chopped walnuts with a little sugar and ground cinnamon. Spread half of the walnut mixture over the phyllo layers. Continue layering 4 more sheets of phyllo, brushing each with butter.
Finish Layering
Spread the remaining walnut mixture, then layer another 8 sheets of phyllo on top, buttering each one. Cut the baklava into diamond or square shapes using a sharp knife.
Bake
Bake in the preheated oven for 45-50 minutes, or until golden brown. Remove from the oven and immediately pour the cooled syrup over the hot baklava.
Cool and Serve
Allow the baklava to cool completely before serving. Enjoy your delicious homemade baklava!
