Prepare the Syrup

In a saucepan, combine sugar, water, honey, and ground cinnamon. Bring to a boil, then reduce heat and let simmer for about 10 minutes. Remove from heat and stir in the vanilla extract. Let cool.

Prepare the Phyllo Layers

Preheat the oven to 350°F (175°C). Melt the butter in a saucepan. Lay one sheet of phyllo dough in a greased baking dish and brush with melted butter. Repeat this step, layering and buttering each sheet, until you have 8 sheets.

Add the Nut Filling

In a bowl, combine the chopped walnuts with a little sugar and ground cinnamon. Spread half of the walnut mixture over the phyllo layers. Continue layering 4 more sheets of phyllo, brushing each with butter.

Finish Layering

Spread the remaining walnut mixture, then layer another 8 sheets of phyllo on top, buttering each one. Cut the baklava into diamond or square shapes using a sharp knife.

Bake

Bake in the preheated oven for 45-50 minutes, or until golden brown. Remove from the oven and immediately pour the cooled syrup over the hot baklava.

Cool and Serve
