Method
Cooking Pasta
Boil the Fettuccine
Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
Grilling Chicken
Prepare and Grill Chicken
While the pasta is cooking, brush the chicken breasts with olive oil. Season both sides with garlic powder, salt, and black pepper. Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked (internal temperature of 165°F). Remove from grill and let rest for a few minutes before slicing.
Making Alfredo Sauce
Prepare the Sauce
In a saucepan over medium heat, melt the butter. Add minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, mixing until melted and smooth. Season with salt and pepper to taste. If the sauce is too thick, add a splash of pasta water to reach desired consistency.
Combining Ingredients
Combine and Serve
In a large bowl, toss the cooked fettuccine pasta with the Alfredo sauce until well coated. Add the sliced grilled chicken on top. Garnish with chopped parsley and additional Parmesan cheese if desired. Serve immediately.
