Prepare the Crust

Preheat your oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.

Form the Crust

Press the crumb mixture firmly into the bottom of a 9-inch springform pan, creating an even layer. Bake in the preheated oven for about 10 minutes, then remove and let it cool slightly.

Prepare the Filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

Add Sugar and Vanilla

Gradually add the granulated sugar and vanilla extract, continuing to beat until fully incorporated.

Incorporate Eggs

Add the eggs one at a time, mixing on low speed until just blended after each addition.

Finish with Sour Cream

Finally, add the sour cream and mix until the filling is smooth and creamy.

Bake the Cheesecake

Pour the filling over the cooled crust in the springform pan. Bake at 325°F (163°C) for 60-70 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

Cool the Cheesecake

Remove the cheesecake from the oven and allow it to cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

Make the Sauce

In a saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice. Stir gently until the berries begin to break down and the mixture becomes syrupy, about 10-15 minutes.

Cool the Sauce

Remove from heat and let the berry sauce cool completely. If desired, you can puree the sauce for a smoother texture.
