Calamari Preparation
Prepare the Calamari
Clean and slice the fresh calamari into rings. Rinse under cold water and pat dry with paper towels.
Prepare the Breading Station
In a shallow bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. In another bowl, whisk together the eggs and milk until well combined.
Bread the Calamari
Dip the calamari rings into the egg mixture, allowing excess to drip off. Then, coat them in the flour mixture, pressing lightly to adhere.
Heat the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Calamari
Carefully add the breaded calamari rings, frying in batches to avoid overcrowding. Cook for about 2-3 minutes or until golden brown, flipping halfway through.
Drain and Serve
Remove the fried calamari with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve immediately.
Marinara Sauce Preparation
Sauté the Garlic
In a saucepan, heat the olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, approximately 1-2 minutes.
Make the Sauce
Add the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar to the saucepan. Stir well to combine.
Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.
Finish with Fresh Parsley
Stir in the chopped fresh parsley just before serving. Adjust seasoning if necessary.
