Preparation

    Prepare the ingredients

    Gather all ingredients: rye bread, corned beef, Swiss cheese, Thousand Island dressing, sauerkraut, and butter.

    Toast the sauerkraut

    In a small pan over medium heat, warm the sauerkraut for about 5 minutes until heated through. Drain any excess liquid and set aside.

Assembling the sandwich

    Spread the dressing

    Spread 1 tablespoon of Thousand Island dressing on one side of each slice of rye bread.

    Layer ingredients

    On two slices of bread (dressing side up), layer the corned beef, warmed sauerkraut, and Swiss cheese.

    Top the sandwich

    Place the other two slices of bread on top, dressing side down, to complete the sandwiches.

Cooking

    Butter the bread

    Spread 1 tablespoon of butter on the outer side of each sandwich.

    Grill the sandwich

    In a skillet over medium heat, place the sandwiches buttered side down. Grill for about 4-5 minutes or until golden brown.

    Flip and cook

    Carefully flip the sandwiches, adding the remaining butter to the pan if necessary, and grill the other side for another 4-5 minutes until the cheese is melted and the bread is golden brown.

Serving

    Slice and serve

    Remove the sandwiches from the skillet, slice in half if desired, and serve immediately while warm.
