Base

Method

Base Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and shredded coconut until well combined.

  3. 3

    Cream Butter and Sugar

In another bowl, beat the unsalted butter until creamy. Gradually add the granulated sugar, continuing to beat until the mixture is light and fluffy.

  4. 4

    Add Eggs and Vanilla

Add the eggs one at a time to the butter-sugar mixture, beating well after each addition. Stir in the vanilla extract.

  5. 5

    Combine Mixtures

Gradually add the dry ingredients to the wet ingredients, alternating with the coconut milk, starting and ending with the dry ingredients. Mix until just combined.

  6. 6

    Bake

Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

  7. 7

    Cool the Base

Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Topping Preparation

  1. 8

    Make the Topping

In a medium bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and continue to whip until firm peaks form.

  2. 9

    Add Toasted Coconut

Gently fold in the toasted shredded coconut into the whipped cream until evenly distributed.

  3. 10

    Top the Base

Once the base is completely cooled, spread the coconut whipped topping evenly over the top.

  4. 11

    Chill and Serve

Refrigerate for at least 30 minutes before serving to allow the topping to set. Cut into squares and enjoy!
