Cooking Pasta

    Boil Water

    In a large pot, bring 4 quarts of water to a boil.

    Cook Pasta

    Add 8 cups of pasta to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the pasta in a colander and set aside.

Sautéing Vegetables

    Heat Olive Oil

    In a large skillet, heat 3 tablespoons of olive oil over medium heat.

    Add Garlic

    Add 3 teaspoons of minced garlic to the skillet and sauté for 1 minute until fragrant.

    Add Vegetables

    Add 1 cup each of bell peppers, zucchini, cherry tomatoes, and sliced carrots to the skillet. Cook for 5-7 minutes until the vegetables are tender.

    Add Spinach

    Stir in 2 cups of fresh spinach and cook until wilted, about 2-3 minutes.

    Season Vegetables

    Season the vegetables with 1 teaspoon of salt and 1 teaspoon of black pepper. Stir to combine.

Combining Pasta and Vegetables

    Combine Ingredients

    Add the drained pasta to the skillet with the sautéed vegetables. Toss everything together over low heat for 2 minutes to combine.

    Add Parmesan

    Sprinkle 1 cup of grated Parmesan cheese over the pasta and toss again until the cheese is melted and evenly distributed.

Serving

    Serve

    Serve hot, garnished with additional Parmesan cheese if desired.
