Method

Preparing the Marinara Sauce

    Heat the Olive Oil

    In a medium saucepan, heat 2 tablespoons of olive oil over medium heat.

    Sauté the Garlic

    Add the minced garlic cloves and sauté for about 1 minute until fragrant, being careful not to burn them.

    Add Crushed Tomatoes

    Pour in the canned crushed tomatoes and stir to combine.

    Season the Sauce

    Add dried oregano, salt, and black pepper. Stir well and bring to a simmer.

    Simmer

    Reduce the heat to low and let the sauce simmer for about 20 minutes, stirring occasionally.

    Finish with Basil

    Stir in the chopped fresh basil right before serving. Adjust seasoning if necessary.

Preparing the Calamari

    Prepare the Oil

    In a large deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

    Whisk Wet Ingredients

    In another bowl, whisk together the eggs and milk until well combined.

    Dredge the Calamari

    Dip the calamari rings first into the wet mixture, then dredge them in the flour mixture, ensuring they are well coated.

    Fry the Calamari

    Carefully place the coated calamari rings into the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy.

    Drain and Serve

    Remove the fried calamari from the oil and drain on paper towels. Serve hot with the marinara sauce.
