Method

Fish Preparation

  1. 1

    Prepare the Batter

In a bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the beer until the batter is smooth and free of lumps.

  2. 2

    Coat the Fish

Pat the fish fillets dry with paper towels. Dip each fillet into the batter, ensuring they are evenly coated.

  3. 3

    Heat the Oil

In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C).

  4. 4

    Fry the Fish

Carefully place the battered fish fillets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Chips Preparation

  1. 5

    Prepare the Potatoes

Peel the russet potatoes and cut them into thick strips to form chips.

  2. 6

    Parboil the Chips

In a large pot, bring salted water to a boil. Add the potato strips and parboil for 5 minutes. Drain and let them cool.

  3. 7

    Fry the Chips

In a separate deep skillet or fryer, heat the vegetable oil to 350°F (175°C). Fry the parboiled chips in batches for about 4-5 minutes or until they are golden brown and crispy. Remove and drain on paper towels, sprinkling with salt.

Serving

  1. 8
