    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer (or sparkling water) until the batter is smooth and of a pourable consistency.

    In a deep pot or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Batter the fish

    Dip each cod fillet into the batter, ensuring it is fully coated.

    Fry the fish

    Carefully place the battered cod fillets into the hot oil. Fry for about 4-5 minutes, or until golden brown and crispy. Remove from oil and drain on paper towels.
