Dough Preparation

    Mix Dry Ingredients

    In a large bowl, combine the all-purpose flour, salt, and baking powder. Mix well until evenly distributed.

    Add Wet Ingredients

    Make a well in the center of the dry ingredients and pour in the water and olive oil. Mix until a dough begins to form.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Rest the Dough

    Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Filling Preparation

    Cook the Onions

    In a skillet, heat a small amount of olive oil over medium heat. Add the finely chopped onion and sauté until translucent.

    Prepare the Filling

    In a mixing bowl, combine the cooked potatoes, sautéed onions, salt, black pepper, and chopped parsley. Mash together until well mixed.

Assembly and Cooking

    Roll Out the Dough

    After the dough has rested, divide it into small balls. Roll each ball into a thin circle on a floured surface.

    Fill the Dough Circles

    Place a spoonful of the potato filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges to seal.

    Cook the Draughts

    In a large skillet, heat some oil over medium heat. Cook each filled draught for about 4-5 minutes on each side until golden brown.

    Remove the draughts from the skillet and let them drain on paper towels. Serve warm with your favorite dipping sauce.
