Calamari Preparation

Clean the Calamari
Rinse the calamari under cold water and pat dry with paper towels. Cut the bodies into rings and leave the tentacles whole.

Soak in Buttermilk
Place the calamari rings and tentacles in a bowl and cover with buttermilk. Let them soak for at least 30 minutes.

Mix the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge them in the flour mixture until fully coated.

Fry the Calamari
Carefully place the coated calamari in the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown.

Drain and Serve
Remove the fried calamari with a slotted spoon and place on paper towels to drain excess oil. Serve immediately with house seasoning.

Mix the Seasoning
In a small bowl, combine garlic powder, onion powder, smoked paprika, dried oregano, dried thyme, salt, and black pepper. Mix well until evenly blended.

Use the house seasoning immediately on the fried calamari or store it in an airtight container for future use.
