Preparing the Ahi Poke

Dice the Ahi
Begin by dicing the fresh Ahi tuna into 1/2-inch cubes and place them in a medium-sized mixing bowl.

Mix the marinade
In a separate small bowl, mix together the soy sauce, sesame oil, chopped green onions, sesame seeds, red chili flakes, and salt.

Combine
Pour the marinade over the diced Ahi and gently mix until the tuna is evenly coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Preparing the Seaweed Salad

Rehydrate the seaweed
In a bowl, soak the dried seaweed in warm water for about 10 minutes until it becomes soft. Drain and squeeze out excess water.

Make the dressing
In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, and sugar until the sugar dissolves.

Combine salad ingredients
In a mixing bowl, combine the rehydrated seaweed with the dressing and mix well. Add the thinly sliced cucumber and sesame seeds, and toss to combine.

Once ready to serve, take the marinated Ahi poke out of the refrigerator and plate it in a serving bowl.
