    Prepare the Broth

    In a pot, heat sesame oil over medium heat. Add minced garlic and ginger, sauté until fragrant.

    Add Water and Flavors

    Pour in 1500ml of water, add bonito flakes, soy sauce, and salt. Bring to a boil, then reduce heat and let simmer for 20 minutes.

    Cook the Pork

    In a separate pan, sear the pork belly until crispy on both sides. Then, lower the heat and let it cook through, about 15 minutes. Slice thinly.

    Prepare the Noodles

    Cook the ramen noodles according to package instructions. Drain and set aside.

    Boil the Eggs

    Bring a small pot of water to a boil. Gently add the eggs and boil for 6-7 minutes for soft-boiled. Remove and cool in ice water before peeling.

    Blanch the Vegetables

    In the same pot used for the noodles, blanch bok choy and bean sprouts for 1-2 minutes until bright green and tender.

    Assemble the Ramen

    In a bowl, place cooked noodles, pour the hot broth over, and top with sliced pork, bok choy, bean sprouts, and halved soft-boiled eggs. Garnish with chopped green onions.
