    Prepare the Rice

    Rinse the Japanese short-grain rice under cold water until the water runs clear. Drain well.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed rice and water. Cook according to the rice cooker's instructions or bring to a boil, cover, and reduce to a simmer for about 18-20 minutes until the rice is tender. Remove from heat and let it sit covered for 10 minutes.

    Prepare the Sauce

    In a small bowl, mix together soy sauce, mirin, and sugar until the sugar is dissolved.

    Cook the Chicken

    In a large skillet, heat sesame oil over medium heat. Add the chicken thighs and cook until golden brown and cooked through, about 5-7 minutes per side. Remove the chicken and slice into strips.

    Combine Chicken and Sauce

    Pour the sauce mixture into the skillet and bring to a simmer. Add the sliced chicken back to the skillet, cooking for an additional 2-3 minutes until the chicken is well-coated.

    Prepare the Eggs

    In a separate pan, fry the eggs sunny-side up or to your preference.

    Assemble the Donburi

    In serving bowls, place a generous scoop of rice at the bottom. Top with the chicken and sauce mixture, followed by the fried egg. Garnish with chopped green onions and nori strips.
