Preparation

    Prepare the Meatballs

    In a large bowl, combine ground pork, chopped scallions (reserve some for garnish), minced ginger, minced garlic, soy sauce, sesame oil, cornstarch, salt, pepper, and egg. Mix well until fully combined. Form the mixture into large meatballs, about the size of a golf ball.

    Bake the Meatballs

    Preheat the oven to 190°C (375°F). Place the meatballs on a baking sheet lined with parchment paper and bake for 25-30 minutes or until cooked through and browned.

    Prepare the Noodles

    Cook noodles according to package instructions. Drain and set aside.

    Sauté Vegetables

    In a large skillet, heat a little oil over medium heat. Add cubed roasted squash and carrots, chilled corn, and diced cucumber. Sauté for 5-7 minutes until heated through.

    Combine Ingredients

    In a large bowl, combine the cooked noodles, sautéed vegetables, and cooked meatballs. Drizzle with additional soy sauce and chili oil to taste. Toss to combine.

    Serve warm, garnished with reserved scallions and additional chili oil if desired.
