Braised Beef
In a large pot, combine the beef chuck roast, soy sauce, brown sugar, minced garlic, minced ginger, star anise, and beef broth. Bring to a boil over medium-high heat, then reduce to low and cover. Simmer for about 2-3 hours until the beef is tender. Remove the beef and let it rest before slicing.
Cook Noodles
While the beef is braising, cook the noodles according to the package instructions. Drain and set aside.
Stir-fry Bean Sprouts
In a large skillet, heat vegetable oil over medium-high heat. Add the bean sprouts and stir-fry for about 2-3 minutes until they are just tender. Season with salt and pepper.
Combine Ingredients
In a large bowl, toss the cooked noodles with sesame oil, then add the stir-fried bean sprouts, diced cucumber, and chopped scallions. Mix well.
Serve
Slice the braised beef and serve over the noodle mixture. Optionally, drizzle with additional soy sauce and garnish with extra scallions if desired.
