Preparation Steps
Prepare the Tofu
Press the tofu to remove excess moisture, then cut it into slices. Heat a non-stick skillet over medium-high heat. Add 1 tablespoon of sesame oil and the tofu slices. Cook until golden brown on both sides, about 4-5 minutes per side. Remove from heat and set aside.
Cook the Noodles
In a pot of boiling water, cook the rice noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
Stir-fry the Bean Sprouts
In the same skillet used for the tofu, add 1 tablespoon of sesame oil. Sauté the minced garlic for about 30 seconds, then add the bean sprouts. Stir-fry for 2-3 minutes until slightly tender. Remove from heat.
Assemble the Dish
In a large bowl, combine the cooked noodles, stir-fried bean sprouts, diced cucumber, and chilled corn. Drizzle with 2 tablespoons of soy sauce and the remaining sesame oil. Toss to combine and season with salt and pepper to taste.
Serve
Plate the noodle mixture and top each serving with griddled tofu slices. Garnish with toasted sesame seeds before serving.
