Prepare the Tofu
Cut the firm tofu into 1-inch cubes. In a skillet over medium heat, add a splash of oil and gently fry the tofu cubes until golden brown on all sides. Remove and set aside.

Make the Mapo Sauce
In the same skillet, add the house-made mapo sauce and bring it to a simmer. Add the fried tofu and stir gently to coat the tofu with the sauce. Cook for about 5 minutes until heated through.

Stir-fry the Bean Sprouts
In another pan, add a little oil and stir-fry the bean sprouts for 2-3 minutes until slightly tender but still crunchy. Season with salt to taste.

Prepare the Cucumber
Dice the cucumber into small pieces and set aside.

Assemble the Dish
In serving bowls, place a portion of cooked rice. Top with the mapo tofu and sauce, followed by the stir-fried bean sprouts. Garnish with diced cucumber and fresh cilantro.
