Preparation Instructions
Prepare the Tofu
Drain the tofu and press it gently to remove excess moisture. Cut it into bite-sized cubes.
Blanch the Chinese Broccoli
Bring a pot of water to a boil. Add the Chinese broccoli and blanch for about 2-3 minutes until bright green and tender-crisp. Drain and rinse under cold water to stop the cooking process. Set aside.
Prepare the Corn
If using fresh corn, cut the kernels off the cob. If using canned corn, drain it well.
Assemble the Salad
In a large bowl, combine the cubed tofu, blanched Chinese broccoli, corn, and pickled red cabbage. Toss gently to mix.
Garnish
Chop the scallions finely and sprinkle them over the salad along with the fried shallots.
Serve
Serve the salad chilled or at room temperature. Enjoy!
