Prepare the Chicken
If using pre-cooked Cantonese BBQ chicken, simply shred or chop it into bite-sized pieces. If cooking from scratch, marinate chicken in a mixture of soy sauce, sesame oil, and rice vinegar for at least 30 minutes before grilling or roasting until cooked through.

Blanch the Chinese Broccoli
Bring a pot of salted water to a boil. Add the Chinese broccoli and blanch for 2-3 minutes until bright green and tender-crisp. Drain and immediately plunge into ice water to stop cooking. Drain again and chop into bite-sized pieces.

Prepare the Salad
In a large bowl, combine the shredded Cantonese BBQ chicken, blanched Chinese broccoli, corn kernels, and pickled red cabbage. Toss gently to mix.

Garnish and Serve
Transfer the salad to a serving platter. Top with fried shallots and fresh cilantro. Drizzle with additional soy sauce or sesame oil if desired. Serve chilled.
