Preparation Steps
- 1
Prepare the Meatballs
In a large bowl, combine ground pork, salt, pepper, and any desired seasonings. Form into large meatballs, about the size of a golf ball.
- 2
Roast the Vegetables
Preheat oven to 400°F (200°C). Toss diced butternut squash and sliced carrots with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
- 3
Cook the Meatballs
In a large skillet over medium heat, add a little oil and cook the meatballs for about 10-12 minutes, turning occasionally until browned and cooked through.
- 4
Stir-Fry the Cabbage
In the same skillet, add shredded cabbage and stir-fry for about 5-7 minutes until wilted. Season with soy sauce and a pinch of sesame oil.
- 5
Assemble the Dish
Serve the cooked rice on plates, top with meatballs, roasted squash and carrots, chilled Chinese broccoli, and stir-fried cabbage.
