    Prepare the Potatoes

    Peel the Russet potatoes and cut them into thin strips, about 1/4 inch thick. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 325°F (163°C). Use a thermometer for accurate temperature.

    Fry the Potatoes (First Fry)

    Drain the soaked potatoes and pat them dry with paper towels. Carefully add a batch of potatoes to the hot oil and fry for about 4-5 minutes, or until they are soft but not browned. Remove them from the oil and let them drain on paper towels.

    Increase the Heat

    Increase the oil temperature to 375°F (190°C).

    Fry the Potatoes (Second Fry)

    Once the oil is hot, return the partially cooked fries to the oil in batches and fry for an additional 3-4 minutes, or until golden brown and crispy. Remove and drain again on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle them with salt, black pepper, garlic powder, and paprika to taste. Toss to coat evenly.
