Preparation

    Prepare the Watermelon Agua Chile

    In a blender, combine the watermelon and lime juice until smooth. Strain the mixture through a fine mesh sieve into a bowl to remove the pulp. Set aside.

    Pickle the Fresnos

    Thinly slice the Fresno peppers and place them in a small bowl. Pour hot water over them and let sit for 10 minutes. Drain and set aside.

    Compress the Cucumber

    Using a mandoline or knife, slice the cucumber into thin rounds. Place the slices in a vacuum sealer bag or between two plates with a weight on top to compress for about 30 minutes.

    Prepare the Hamachi

    Slice the hamachi into thin sashimi-style pieces and arrange them on a plate.

    Assemble the Dish

    Drizzle the watermelon agua chile over the hamachi, scatter the pickled Fresnos and compressed cucumber on top, and finish with a sprinkle of sea salt and cilantro leaves. Drizzle with olive oil before serving.
