Preparation of Tater Kegs

    Prepare the Potatoes

    Peel the russet potatoes and cut them into quarters. Boil in salted water for about 15 minutes or until fork-tender. Drain and let cool.

    Mash the Potatoes

    Once cooled, mash the potatoes in a large mixing bowl until smooth. Ensure there are no lumps.

    Mix in Fillings

    Add the crumbled bacon, diced jalapeño, softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper to the mashed potatoes. Mix well until combined.

    Form the Kegs

    Take a portion of the potato mixture and shape it into a small keg (about the size of a large egg). Repeat until you’ve used all the mixture.

    Coat the Kegs

    Roll each keg in flour, then dip into the beaten egg, and finally roll in flour again to coat.

    Heat Oil

    In a deep fryer or large pot, heat the oil to 350°F (175°C).

    Fry the Kegs

    Carefully lower the kegs into the hot oil in batches, making sure not to overcrowd. Fry for about 4-5 minutes or until golden brown. Remove and drain on paper towels.

Ranch Dipping Sauce

    Serve

    Pour ranch dressing into a small bowl or ramekin for dipping. Serve alongside the freshly fried tater kegs.
