Preparation
Prepare the Chicken
Season the chicken breasts with salt and pepper on both sides.
Fry or Grill the Chicken
If frying, heat oil in a skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. If grilling, preheat grill to medium-high and grill chicken for about 6-8 minutes on each side.
Coat with Buffalo Sauce
Once the chicken is cooked, remove it from the heat and toss it in a bowl with the Buffalo sauce until well coated.
Assembly
Prepare the Buns
While the chicken is cooking, slice the gluten-free buns in half and toast them if desired.
Build the Sandwich
On the bottom half of each bun, add a generous amount of lettuce, followed by the coated chicken breast, pickles, and a drizzle of bleu cheese dressing. Top with the other half of the bun.
Serving
Serve Immediately
Serve the Buffalo chicken sandwich hot with additional Buffalo sauce or bleu cheese dressing on the side if desired.
