Method

Preparing the Risotto

    Sauté Shallots

    In a large saucepan, melt 2 tablespoons of butter over medium heat. Add the finely chopped shallots and sauté until translucent, about 2-3 minutes.

    Toast Arborio Rice

    Add 1 cup of Arborio rice to the saucepan and stir for 1-2 minutes until the rice is lightly toasted.

    Deglaze with White Wine

    Pour in 1 cup of white wine and stir until it is mostly absorbed by the rice.

    Add Chicken Stock Gradually

    Slowly add 4 cups of warm chicken stock, one ladle at a time, stirring continuously. Allow the rice to absorb the stock before adding the next ladle. This process should take about 20-25 minutes.

    Finish with Parmesan

    Once the rice is creamy and al dente, stir in 1 cup of grated Parmesan cheese. Season with salt and black pepper to taste. Keep warm while you prepare the seafood.

Cooking the Seafood

    Heat the Olive Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

    Cook the Shrimp

    Add 1 pound of jumbo shrimp to the skillet and cook for 2-3 minutes on each side until they are pink and opaque. Remove from the skillet and set aside.

    Cook the Scallops

    In the same skillet, add the sea scallops and cook for about 2-3 minutes on each side until golden brown and cooked through. Add 3 minced garlic cloves during the last minute of cooking.

    Combine Seafood

    Return the cooked shrimp to the skillet with the scallops and toss gently to combine. Remove from heat.

Preparing the Vegetables

    Sauté the Vegetable

    In a separate pot, steam or sauté the vegetable of the day (e.g., asparagus or broccoli) until tender but still crisp, about 4-5 minutes.

Serving

    Plate the Dish

    To serve, spoon the garlic Parmesan risotto onto a plate, top with the pan-seared shrimp and scallops, and arrange the vegetable of the day alongside.
